MY FIRST INVATATION TO A MUD BUG BOIL
I was invited to a Mud Bug Boil. When I arrived they had a large pot of water boiling on a propane heater and in the pot was cabbage, potatoes, corn on the cob, onions, garlic, and Boudin. The cook pulled a tarp off of a mound on the ground to reveal 2 large blue mesh sacks filled with about 70 pounds of squirming Crawdads. After removing the vegetables and adding spices and boil mix to the fresh water they start it to boil, meanwhile they put about 35 pounds of crawdads in a pot and add salt, (it makes the bugs throw up the mud in their systems.) After a quick rinse its time to add the crawdads to the pot of boiling water. 20 minutes later its time to eat. They pour out the crawdads onto newspaper spread on a table and the twisting and pulling begins. For a mudbug they are mighty tasty. 8 people vs 70 pounds of crawdads, the 8 people won, there were'nt any crawdads left unpeeled. Hats off to Chef "Randy" who can really boil up a mesh of bugs.
